Moroccan Fable Couscous x The Kindness Echoes
A traditional Moroccan “Beef” Couscous Salad, just sans the meat and double the flavour

Spice up your day with the aromatic flavours in this simple couscous dish – a staple when it comes to Moroccan cuisine. Eating a salad doesn’t mean you have to skimp out on the meaty goodness. For a fast, flavourful and versatile dish for any occasion, all with very little effort on your part, this Moroccan Fable couscous will not disappoint.
Ingredients
Spiced Fable:
- 250g Fable
- 1 tbsp plant-based “beef” stock
- 2 cups boiling water
- 1 tsp cumin powder
- 1 tsp ground coriander
- 1 tsp brown sugar
- Pinch salt and pepper
- Pinch ground cinnamon
- 2 tbsp olive oil
- 1 red onion, cut into wedges
Couscous:
- 200g couscous
- 2 cups boiling water
- 1 tsp olive oil
Additional ingredients:
- 1 radicchio
- ¼ cup silvered almonds
- 1 lemon, cut into wedges
- Almond feta
- Salt and pepper, to taste
- Coriander, to garnish
- Olive oil, for dressing
Method
- Soak Fable with boiling water and plant-based stock for 5 minutes or until soft. Once done, drain the liquid then shred up Fable meat with a fork or your hands. Heat up a frying pan and fry the shredded Fable with all the spices for about 5 minutes (or until the Fable starts crisping up). Grill up the red onion in the same pan at the same time.
- In a small pot over a medium heat, add oil and couscous. Let couscous brown slightly then add 2 cups of boiling water. Let couscous simmer with a lid on until water has evaporated completely.
- To serve, start with the radicchio cups and fill with couscous first then Fable.
- Top with grilled red onions, coriander, silvered almonds, almond feta, salt and pepper and a small drizzle of olive oil. Finish off a fresh squeeze of lemon.
